In particularly fine restaurants the steak is served with an original Laguiole cutlery. The Laguiole is a traditional pocket knife from France, named after the region in the south of the country. There the knife was developed in the 19th century by Pierre-Jean Calmels. The typical bee or fly on the back of the knife is a trademark and is processed differently from the smithies. However, it serves only as an ornament and not for locking the blade. Further features are the individual ornamentation of the backspring and the blade with ground notches as well as a cross formed by nails which are hammered around the middle rivet in the handle. Legend has it that shepherds put the knife in the ground at night to pray in front of the cross.
